I love this cake.
- 1 cup of butter
- 1 cup of water
- 2 cups of sugar
- 2 cups flour
- 2 eggs
- 1/2 cup of sour cream
- 1 tsp. almond extract
- { see ingredients for icing below }
ingredients
Preheat your oven to 375°
Bring 1 cup of butter (2 sticks) and 1 cup of water to a boil.
Take off burner, stir in 2 cups of sugar until dissolved.
In another bowl, mix 2 cups of flour, 1 teaspoon of baking soda & 1/2 teaspoon of salt.
Then make a hole in the flour, pour the hot mixture in and stir.
Mix in 2 beaten eggs, 1/2 cup of sour cream, & 1 teaspoon almond extract.
This is my favorite of all the extracts, amazing in coffee as well
Pour into a greased cake pan and bake for 25-30 minutes (check the center with a toothpick).
Make your icing while the cake cools.
The Icing
- 1 stick of butter
- 1/4 cup of milk
- 4 ½ cups powdered sugar
- 1/2 teaspoon almond extract
- 1 cup of chopped pecans or walnuts
ingredients:
Melt butter and milk in a sauce pan.
Add powdered sugar, almond extract, and pecans or walnuts. (I used walnuts)
Then pour the icing over your cake and you’re finished

Whoa! I am 30 weeks pregnant, and I seriously CRAVE almond extract. Well, I guess I crave anything that I can put almond extract INTO. I’ll walk by and just have to pull the little bottle out just to sniff it. It smells heavenly.
