My Husband and I stayed at this really neat bed and breakfast the night of our wedding, and recently revisited it while he was home on leave. They deliver this delicious breakfast each morning that was so good we asked for the recipe. I give you, Eggs Salsa
Ingredients:
2 Tablespoons Chopped Ham
1 Tablesoon Picante Sauce
1 Egg, Break the Yolk
Sour Cream
1/4 cup shredded monterey jack cheese
Layer your ham, then picante sauce, then your egg.

Bake at 350° for 30 minutes, or until the yolk is cooked. Watch it to make sure the yolk isn’t white or bubbling up. If so, it’ll get very crisp. If a bubble forms, break it with a fork.
Bake 30 Minutes at @ 350° (or until yolk is set). Check to see that the
yolk or white is not bubbling up; if so, break
that bubble. (annnnnnd now I’m singing Def Leppard in my head)
Spread cheese on top of egg and return casserole to Oven until melted.
Garnish with a dollop of sour cream and a few chunks of tomato and serve
hot.
