Matt-sagna – Matt’s Lasagna

Another name for really good lasagna made by my Husband :) He’s also famous for his Matt-Loaf, really good meatloaf, recipe.

Ingredients:
Oven ready lasagna noodles, 1 package (8 oz)
2 Lb’s Mozzarella cheese, shredded (that’s right, 2 whole pounds)
Little container of ricotta cheese (15 oz)
1 egg
Marinara Sauce, you can use jarred or make it yourself. Matt uses one big jar and one little jar.
2 pounds Italian Sausage

  • Cook your sausage in a skillet.
  • Beat your egg and mix with your ricotta cheese.
  • Spread some marinara sauce in the bottom of your casserole dish and begin layering your ingredients.

    -mozzarella cheese


Some people like to mix their sauce and meat together, you can do it whichever way you prefer :)

Matt also sprinkles mozzarella on top of each layer. You can really just get creative with whatever ingredients are your favorite and add a little more of whatever floats your boat.

Cover with foil and bake at 350° for 30-35 minutes, remove foil and bake for an additional 12 minutes or until slightly browned and bubbling.

Serve with breadsticks and salad, and top with freshly grated parmesan cheese.

1 family size can tomoto soup
1 large can of tomato paste
1 large can of tomato sauce
garlic to taste- I use about 2 tbsp, but I like garlic
Parmesean- about 1/4-1/2 cup
1/4 c sugar
italian seasoning- I use the premixed kinds you can buy in the seasonings aisle
1 tbsp olive oil
Mix all ingredients in a large pot and bring to boil. Reduce heat and simmer on low for about 30 mins.
This will make about 3-4 jars! It’s great for any recipe you need spaghetti sauce for!

I didn’t get a picture of the end product because I was at olive garden picking up salad and breadsticks. What? Some things are too good to try and make yourself :)
