Here’s another easy to throw together, slice and bake cookie. These are great to throw in a cookie basket for friends during the holidays. The great thing about ’em is you can make the dough, roll it up and put it in the freezer until you’re ready to slice and bake them 🙂
1 cup softened butter (2 sticks)
2 cups firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans
Bake at 375° for 6-8 minutes. Transfer to wire racks to cool. Makes 8 dozen.
Note: you can freeze the dough up to 3 months. Slice dough while frozen and bake as directed.
