Mexican Fudge

This is another staple at our family functions, courtesy of my Aunt Melinda. We usually do half with jalapenos and half without for the kiddos :)

MEXICAN FUDGE
Mix the following ingredients in a large bowl:
4 cups of shredded cheddar cheese
4 cups of shredded monterrey jack cheese
6 eggs
Carnation milk (not Pet) 5 oz.

Take 9 X 12 pan and cover with Pam. Line bottom of pan with sliced jalepenos. Pour cheese mixture over jalepenos.

Bake at 350 for 45 minutes

    yum! Do you eat this as an appetizer or is it a side-dish? Would you eat it with crackers?

      We eat it as an appetizer, but what doesn’t get eaten prior to dinner gets eaten at dinner as a side. It is a quiche like consistency and is cut into squares for serving :)
